Wattleseed brings a native Australian flavour to this chai. Roasted and ground, the seed of certain acacias tastes of coffee, chocolate and hazelnut. Here it sits with roasted dandelion root and chicory, two roots long brewed in place of coffee, under the house spice mix. The maker describes a chocolate and roasted-nut note, and there is no caffeine.
The spices are the house mix Margaret River Chai Company uses in all its chai: fennel, Ceylon cinnamon, ginger, cardamom, turmeric, coriander, star anise, cloves, black pepper and mint. It comes loose in bags and amber jars, or as tea bags, and the stall at the Margaret River Farmers Market is there every Saturday.
Simmer it slowly with milk on the stove and strain it. It makes an easy after-dinner cup for anyone who has finished with coffee for the day.
