Turmeric is the first thing you see in this chai: stirred into hot milk, it turns the cup a deep gold. Golden Turmeric Chai piles extra turmeric onto the house spice mix, with true Ceylon cinnamon, cardamom pods, ginger and black pepper. There is no tea in it, so no caffeine either. The flavour is earthy and gently peppery, with the sweetness of cinnamon coming through.
Ceylon cinnamon is softer and sweeter than cassia, the other spice sold as cinnamon. Margaret River Chai Company builds all its chai on the same house spice mix and sells this one loose in bags and amber jars, or as tea bags. Look for the stall at the Margaret River Farmers Market on Saturdays.
Simmer it gently with milk on the stove, as the maker suggests, then strain it. A spoon of honey rounds out the pepper.
