Margaret River Chai Company
Rooibos and honeybush both grow in South Africa, and neither contains caffeine. Rooibos, the red bush, brews a red-brown cup with a mellow, slightly woody taste. Honeybush takes its name from the honey scent of its flowers, and the tea tastes a little of honey too. Together they give the house spices a soft, sweet base, and the spice stays in the background.
Margaret River Chai Company uses the same house spice mix in all its chai, from fennel and star anise to cardamom, cloves and mint. This one comes loose in bags and amber jars, or as tea bags. The stall is at the Margaret River Farmers Market on Saturdays, and the maker lists the shops that stock it on its own site.
Simmer it slowly with milk for a creamy chai, or steep it in just-boiled water for a lighter cup.
