If your chai habit began in a cafe, start here. Classic Black Chai pairs Australian black tea with the house spice mix, plus turmeric and sweet orange peel. The tea gives it body, cardamom and cloves bring the perfume, black pepper and ginger add a little bite, and the orange peel lifts the finish.
It has caffeine, from the black tea. Margaret River Chai Company builds every chai on the same house spice mix, from fennel and star anise to coriander seed and mint, and sells them loose in bags and amber jars, or as tea bags the maker describes as biodegradable. You'll find its stall at the Margaret River Farmers Market every Saturday.
Make it the way the maker suggests, simmered slowly in a pan with milk, then strained. Sweeten it to taste, and take your time.
