Matcha is green tea ground to a fine powder, so you whisk in the whole leaf rather than steeping it and throwing it away. This latte powder is 35 percent ceremonial Japanese matcha, mixed with coconut sugar and chai spices: cinnamon, ginger, cardamom, clove and star anise. Expect the grassy, slightly savoury taste of matcha first, then warm spice, with the coconut sugar adding a caramel note.
The matcha means this one has caffeine. It is one of Margaret River Chai Company's latte mixes, sold beside its loose-leaf chai in the online shop. You'll find the company's stall at the Margaret River Farmers Market every Saturday.
Whisk a spoonful into a splash of hot water until smooth, then top it with warm milk. In summer, shake it with cold milk and ice instead.
