Two Cracks Coffee
Swiss Water decaf has its caffeine taken out with water rather than solvents, before the green beans are roasted, so what's left tastes like coffee. This one is Colombian, from Huila, a high, mountainous region in the south-west of the country known for sweet, well-balanced coffees.
Two Cracks roasts it in small batches at its roastery and cafe on Bussell Highway in Cowaramup, Western Australia, alongside a changing list of single origins. The owner and roaster, Dale, grew up in Malta, where strong coffee with a Sicilian and Italian accent was part of everyday life. You'll also find Two Cracks at Stall 7 of Origins Market in Busselton.
